Oldy but goody! I love love love using my crock pot, it doesn’t get easier than this. I also had enough left over to freeze for a future rainy day.
Pot Roast with Noodles
1 2 to 2 1/2 lb. beef chuck pot roast
1 tablespoon cooking oil
2 medium carrots, coarsely chopped
2 stalks celery, sliced
2 cloves garlic, minced
1 tablespoon quick-cooking tapioca
1 14 1/2 oz. can Italian-style stewed tomatoes
1 6 oz. can Italian-style tomato paste
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
4 cups hot cooked noodles
*Personal addition, Chard
Directions:
In a large skillet brown roast on all sides in hot oil. 
Meanwhile in a 3 1/2 or 4 quart crockery cooker place carrots, celery, onion, and garlic. Sprinkle tapioca over vegetables. Place mat atop veggies.
In a bowl combine undrained tomatoes, tomato paste, brown sugar, salt, pepper, and bay leaf; pour over the meat. 
Cover; cook on low-heat setting for 10 to 12 hours or on high-heat setting for 4-5 hours. Discard bay leaf. Skim off fat. 
Serve with hot cooked noodles

I am making steak fajitas in the crockpot. It smells so much like a Mexican restaurant in here I half expect some mariachi singers to come out of the bathroom singing De Colores.

Southwestern Salsa Chicken.
4 boneless skinless chicken breasts.
1 bottle of medium chunky salsa.
1 bottle of mango peach salsa.
1 can of diced tomatoes OR once dice fresh tomato.
1 can of corn.
1 diced fresh red pepper.
1 can of black beans.
Celery salt.
Garlic powder.
Ground black pepper.
Tabasco to taste.
Cook on low for 8 hours.
Add Mexican blend cheese once its on the plate.
Serve over yellow rice or with tortilla chips. Or both!!
